Vanilla Essence

An extract of the vanilla pods, this solution is made by maceration and percolation in water and ethanol. The primary flavour giving compound is vanillin but the pure extract has many other flavour compounds that create the overall taste. The way in which the extraction process is done, natural vanilla essence has colour. Clear vanilla essence is artificially made.

Artificial vanilla essence is made from only vanillin, which is why the flavour profile is a lot less complex.

Vanilla essence is considered one of the main ingredients in western desserts such as cake, brownies and cookies.
